Gluten-Free Banana Bread
My sister has been craving a lot of sweets lately, and I make her meal preps every Monday. She’s strictly on a vegan, no gluten diet so I wanted to make her something she could have throughout the week, without it going bad or stale. This is my version of banana bread! I bought these cute silicone donut molds from Amazon and they are the absolute easiest to clean!
Refrigerated:
⅓ cup of oat milk or plant based milk
3 bananas
Baking and spices:
2 tbsp of ground flaxseed
½ cup of brown sugar
1 ¾ cup of gluten free flour
1 teaspoon of baking soda
2 teaspoons of vanilla
1 teaspoon of cinnamon
1 teaspoon of nutmeg
Oil and vinegars:
⅓ cup of coconut oil
Optional garnishes:
2 tbsp of brown sugar
Walnuts
Banana
Blueberries
Directions:
Take a small mixing bowl and take 2 tbsp of ground flaxseed and 6 tbsp of water and whisk together and set aside
Set oven to 325 degrees fahrenheit
Take ⅓ of a cup of coconut oil and put into a separate mixing bowl.
Add your flaxseed eggs to coconut oil
Add 1 ¾ gluten free flour, 1 teaspoon of baking soda, 2 teaspoons of vanilla, 1 teaspoon of cinnamon and 1 teaspoon of nutmeg to the rest of your mixture and stir
Add mashed bananas and lightly fold into your now batter
Add to a greased (you can use vegan butter or more coconut oil) pan
(This is where you can add more sliced bananas, walnuts, brown sugar for a yummy crust or all three!)
Bake for 50 minutes to an hour until baked through and crowned
