Ye Old Meatloaf Cipe’


I am completely in love with all “dump” recipes that I can get my hands on. Fried rice, stone soups, and the mother of all American leftover cuisine: Meatloaf. The beauty in using scraps and creating another dinner for you and your loved ones is a recyclable joy that leaves a good feeling on your conscience and wallet. This is a cheap, and flavorful recipe that you can use time and time again. This is my Ye Old Meatloaf Cipe’


Tips:

  • In most meatloaf recipes they ask to use white vinegar + brown sugar + other seasoning and sauces. I keep things simple and use two types of barbecue sauces: a hickory and a sweet one. Barbecue sauce contains most if not all the ingredients in most meatloaf sauces.

  • I like to use 1 pound of ground pork and 1 pound of 80 percent lean beef for flavor and contrast.

  • Mashed potatoes and your favorite greens will be the perfect side dish to this main entree.

Ingredients
Meatloaf Ingredients:

Refrigerated:
1lb of ground beef
1lb of ground pork
1 medium onion finely chopped, sauteed for 2-4 minutes
2 large eggs
3 garlic cloves minced

Seasoning:
3 tablespoons of ketchup
1 tablespoon of mustard
3 tablespoons of dried parsley
3/4 cup Panko breadcrumbs
1/3 cup milk
1 teaspoon of salt
4 tablespoons of Italian seasoning
1 tablespoon of ground black pepper
1 tablespoon of ground paprika
1 tablespoon of beef bouillon
1 teaspoon of garlic salt
1 teaspoon of onion powder
1 teaspoon of garlic powder

Sauce ingredients:
Any 18 oz bottle of barbecue sauce that is sweet
Any 18 oz bottle of barbecue sauce that is hickory
4 tablespoons of ketchup
1 teaspoon of black pepper
1 teaspoon of liquid smoke
1 teaspoon of onion powder
1 teaspoon of garlic powder

Equipment needed:
A large mixing bowl
A medium mixing bowl
A 9 x 13 inch aluminum pan


Directions:

  1. Preheat your oven to 375 degrees

  2. Chop your medium yellow onion and saute until tender and set aside to cool (about 2-4 minutes)

  3. In a large mixing bowl, add:

  4. 1 pound of ground beef

  5. 1 pound of ground pork

  6. Mix together lightly

  7. Add your seasonings: 

  8. 3 tablespoons of ketchup

  9. 1 tablespoon of mustard

  10. 3 tablespoons of dried parsley

  11. 1 teaspoon of salt

  12. 4 tablespoons of Italian seasoning

  13. 1 tablespoon of ground black pepper

  14. 1 tablespoon of ground paprika

  15. 1 tablespoon of beef bouillon

  16. 1 teaspoon of garlic salt

  17. 1 teaspoon of onion powder

  18. 1 teaspoon of garlic powder

  19. Your sauteed onions

  20. Mix until fully incorporated and then add your:

  21. 3/4 cup Panko breadcrumbs

  22. 1/3 cup milk

  23. And 2 large eggs

  24. And mix LIGHTLY

  25. Add to your 9 x 13 and gently press down to shape evenly

  26. Bake for 40 minutes, undisturbed

  27. Mix your sauce in a mixing bowl:

  28. Any 18 oz bottle of barbecue sauce that is sweet

  29. Any 18 oz bottle of barbecue sauce that is hickory

  30. 4 tablespoons of ketchup

  31. 1 teaspoon of black pepper

  32. 1 teaspoon of liquid smoke

  33. 1 teaspoon of onion powder

  34. 1 teaspoon of garlic powder

  35. And mix and taste

  36. After your meatloaf has cooked for 40 minutes, 

  37. Take your meatloaf and set aside

  38. Raise your oven temperature to 395 degrees

  39. Layer your sauce mixture on top and bake your meatloaf for 20 minutes

  40. After 20 minutes, turn off your oven and let your meatloaf cool down for at least 10 minutes, then slice and add parsley on top and enjoy!
