Baked Herb Salmon

Weekday dinners are sometimes difficult for me since I usually get off at 5:00pm from work. Who has time to make an amazing and healthy meal? Most of the time I answer that question with take out. Since the pandemic I’m in love with the idea of togo orders being the social norm and a heroic act of salvaging your local business as opposed to irresponsible spending. If however, you want to keep some emergency recipes in your arsenal, this should be one of them. It is easy, delicious, and quick, just like your favorite side chick.

Inappropriately appetizing, I hope you enjoy this Baked Herb Salmon!

Ingredients
2 salmon fillets (skin on)
2 slabs of butter
2 tablespoons of olive oil
1 teaspoon of salt
1 teaspoon of black pepper
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
1/2 teaspoon of paprika
½ teaspoon of garlic salt
1 tablespoon of italian seasoning (thyme/rosemary/oregano)
3 tablespoons of mayo

Directions:

  1. Preheat your oven to 375 degrees and ready your rack to the middle position of the oven.

  2. Add olive oil to your salmon and liberally salt and pepper each side of the salmon fillets.

  3. Add aluminum foil to your baking sheet for easy clean up and lay your salmon onto it.

  4. Add 3 tablespoons of mayo in a bowl, ½ teaspoon of garlic powder, onion powder, paprika, and garlic salt and mix. 

  5. Add your mayo mixture on top of the salmon fillets.

  6. Take two slabs of butter and lay in between the salmon fillets.

  7. Add your italian seasoning on top of the mayo and bake your salmon for 15-18 minutes

  8. Turn off the oven and leave the door open and let it rest for 5 minutes

  9. Serve and enjoy!

Tips:

If you would like a zesty finish, add lemon juice to your mayo mixture!

My favorite thing to do is cook asparagus for ten minutes in some garlic butter, then adding the salmon on top and cook accordingly, and you have an easy dinner!

If you have any herb mixtures you want to try, like Flavor God’s seasoning, or even Old Bay, omit the herbs and add it to your mayo mixture instead and get an entirely new flavor profile.
