Halloween Chocolate Banana Bread

I have found the BEST, throw away candy bread. Let me explain why it has this name! I wanted to find a recipe that was the perfect hybrid between a carrot cake and a banana bread and I think I found it. This crowd pleasing autumn star of a recipe is the perfect carrier for all of that extra halloween candy you have laying around. I chose reeses peanut butter cups and it tasted amazing! But the choice is really up to you of what you would like to add. Also, I have made it so if you wanted to add some shredded carrot in there as well, it would be completely possible to do so! So let’s get it poppin’:

Preheat your oven to 375 degrees Fahrenheit and take a large bowl and mix your butter, sour cream, sugar, and 2 eggs until they are creamed together. If you do not have sour cream, you can substitute it with milk and a little bit of lemon juice! Take a hand mixer and blend in your bananas, vanilla, cinnamon, nutmeg and your brown sugar until everything is fully incorporated. Make sure to stir the nutmeg thoroughly as it can become bitter when not mixed well.

Add your flour and baking soda and mix again. (Letting the seasonings incorporate with the wet ingredients before adding the dry ingredients allows for a better taste and texture) If you are adding shredded carrots this would be a good time to do so! I wouldn’t recommend anything more than half of a cup!

Butter a 13 x 9 inch baking dish (I have NOT made these as muffins so I cannot ensure cooking time), and add in your batter. After your batter is settled, add your favorite candies! Then bake at 375 degrees for 35 minutes, make sure to check on it every ten minutes and rotate it if your oven has severe hot spots.

Take it out and let it cool and now you are done!

Optional: if you would like to have a crust on your bread you can mix :

½ cup of melted butter , ½ cup of flour, ½ cup of sugar or brown sugar, and a handful of chopped pecans and cream together and add it to the top of your bread right before you pop it in the oven. 


Tips: DO make sure your bananas are ready for bread making, just because they are a little brown does not mean they are, the inside should be very thick and a dark yellow.

Refrigerated:
3 bananas
3 eggs
1 cup of sour cream
1/2 cup of butter (softened)

Baking and Spices:
2 cups of all purpose flour
1 tsp of salt
1 ½ cups of sugar
4 tbsp of vanilla
1 tbsp of cinnamon
1 tbsp of nutmeg
1 tbsp of brown sugar

Directions:

  • Preheat your oven to 375 degrees fahrenheit

  • Take a bowl and mix ½ cup of butter (softened), 1 cup of sour cream, 1 ½ cup of sugar, and 2 eggs until creamed together.

  • Take a mixer and blend in 3 mashed bananas, 4 tbsp of vanilla, 1 tbsp of cinnamon, 1 tbsp of nutmeg, 1 tsp of brown sugar and mix

  • Afterward, add 2 cups of all purpose flour, and 1 tsp of baking soda and mix.

  • Butter a 13 x 9 inch pan and lay batter into it gently.

  • Add your choice of chocolate candies: reeses peanut butter, snickers, twix, or whatever you’d like, skys the limit!

  • Bake for 35 minutes and take it out to cool immediately
