Moroccan Chicken

Sometimes my first world problems get in the way of my own ego, fighting side by side like twins that are too similar to see that if they worked together, they could do great things. I don’t like washing dishes, and even though I abuse my dishwasher at any opportunity I’m given, I do feel some sympathy for it some days. A one pan cheat sheet meal should definitely be in every young adult’s arsenal. I also understand I use soy sauce and beef bouillon in this recipe, but I omit salt to keep the integrity of the turmeric.If you’re looking to mix up your typical chicken and vegetable pan meal, try this Moroccan Style Drumstick Recipe!




Ingredients:

Produce
1/4 cup plain whole milk yogurt
2 to 3 teaspoons minced garlic, to taste
2 tablespoons parsley, finely chopped
1 bag of golden baby potatoes
Lemons
¼ cup of olives of choice
8 to 9 chicken drumsticks


Seasonings
2 teaspoons paprika
2 teaspoons cumin
1 teaspoon of low sodium soy sauce
1 teaspoon of liquid smoke (hickory)
1 teaspoon of beef bouillon
1/2 teaspoon onion powder
1 teaspoon ginger
1/2 teaspoon black pepper
1/2 teaspoon turmeric
1/4 cup olive oil

Directions:

  1. Preheat your oven to 375 degrees

  2. Take a large mixing bowl and add in your ¼ cup of olive oil, ¼ cup of plain whole milk yogurt of choice, 2 teaspoons of paprika, 2 teaspoons of cumin, 1 teaspoon of low sodium soy sauce, 1 teaspoon of beef bouillon, ½ teaspoon of onion powder, 1 teaspoon of ginger, ½ teaspoon of black pepper, ½ teaspoon of tumeric, 3 teaspoons of minced garlic, 2 tablespoons of finely chopped garlic and mix 

  3. In a large baking pan, add in your golden potatoes, you can either chop them in halves or leave them whole, and place your chicken drumsticks so they’re not too crowded while baking on top and add in the rest of the marinade so it can seep into the potatoes

  4. Cut your lemons in halves or slices, completely up to you!

  5. Bake your chicken for 30 minutes and raise your heat to 400 degrees, and take out your chicken and place your lemons and put your baking pan back into the oven

  6. Bake for another 20 minutes 

  7. Add in olives and top with more parsley and cracked black pepper!
