Sweet and Savory Carrots

I think sometimes it is equally as difficult to host and not host a holiday party. When you’re hosting, at least you have a pulse of what is going to be there, and when. When you’re a guest, what should you bring? What side dish will people want? Are you going to have the second round of mashed potatoes and be greeted with a guest's groaning: “more?” Here is a very EASY, grocery friendly side dish that you whip up in minutes that is festive, easy to cook, can be eaten during Thanksgiving, Christmas, Groundhogs Day, whatever! These are some Sweet and Savory Carrots, and they will be your best friend at your next potluck!

Ingredients
2 pounds of carrots
2-3 tablespoons of oil of choice
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon of garlic salt
1 teaspoon of italian seasoning (thyme/rosemary/oregano mix)
2 teaspoon of brown sugar
Salt and pepper to taste
Minced parsley for garnish

Directions:

  • Preheat your oven to 425 degrees

  • Peel and wash your carrots (don’t be nasty). 

  • Cut them into matchsticks, and toss them in 3 tablespoons of oil

  • Add 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of garlic salt, 2 teaspoons of brown sugar and salt and pepper to taste into a mixing bowl

  • Toss your sexy, oiled carrots into your seasonings and coat well

  • Take a baking sheet and set parchment paper on top

  • Lay your carrots in an even layer without them overlapping

  • Bake for 15-20 minutes depending on your oven

  • They should be able to be pierced by a fork with a little force, but not mushy enough to fall apart easily.

  • Sprinkle with fresh ground black pepper and minced parsley
