Tangy Peanut Butter Icing
A lot of the time I try and eat as much icing as possible on a cake before I get sick. I don’t know if I genuinely become physically sick or my mouth is just tired of the excessive sweetness. Either way, we’ve all been there as icing lovers and it is obvious that I live my life in excess. Sometimes we love icing more than it loves us back. In the midst of this idea, I was on my tenth banana bread of the pandemic and it was showing. The same flavor profile being emulated over and over and over again, I had to do something different. I wanted to do a topping but didn’t want it to be overly sweet, so, this is how my Tangy Peanut Butter Icing was made. It has a good cinnamon flavor, tangy sweetness, and last but not least, you can eat a lot of it without feeling overwhelmed!
6 tbsp of peanut butter (smooth)
Half a cup of sour cream
1 tbsp of vanilla extract
1 teaspoon of cinnamon
2 teaspoons of granulated sugar
optional: some brown sugar for an added sweet topping
Directions:
Take a mixing bowl and add half a cup of sour cream, 1 tbsp of vanilla and 6 tbsp of peanut butter
Take a mixer and cream together
Add 1 teaspoon of cinnamon and 2 teaspoons of granulated sugar and mix with a fork until a fluffy consistency
Add to your fridge and chill for 30 minutes to an hour
Frost your butts off!
