Thai Tea Cheesecake Bites
I’m absolutely ECSTATIC about this new Thai Tea trend that is taking over my current foodie spots! I grew up drinking Thai Tea so it a very familiar flavor. It’s an earthy, sweet milk tea that keeps you energized and happy, so it just makes sense that everyone wants well, Thai Tea everything! I wanted to show you guys how to make these super Thai Tea cheesecake bites for your favorite caffeine fiend friend! Let’s get to bakin’ bitches.
Cream cheese filling:
16 oz cream cheese
2 eggs
3 tbsp of vanilla extract
¼ cup of granulated sugar
½ cup of sour cream
¼ cup of heavy cream
1 12 oz can of your choice of thai tea
Graham cracker crust:
1 ½ cup of graham cracker crumbs
5 tbsp of unsalted butter (melted)
3 tbsp of granulated sugar
Equipment needed:
a stand in or hand mixer
Muffin tin

Directions:
Preheat oven to 325 degrees.
Line a regular size muffin pan with paper liners.
Combine your 1 ½ cup of graham cracker, 5 tablespoons of unsalted melted butter and 3 tbsp sugar in a small bowl. Divide the crumbs evenly onto the bottom of the lined muffin tin and smash to make a formidable crust. I recommend using a spoon or a bottom of a small cup.
Bake for 5-6 minutes in the oven.
-Take out of the oven and cool completely.
- Take 16 oz of cream cheese and beat with a mixer.
- Add in ½ cup of sour cream, ¼ cup of sugar, 2 eggs and 3 tbsp of vanilla. Mix until combined.
- Pour cheesecake mixture into the cooled muffin tin about half way.
- Take ¼ cup of heavy cream and 12 oz of thai tea and whip together until frothy.
- Swirl your heavy cream mixture on top of the cheesecake mixture to whatever design you would like
- Place in the oven and bake for 20 minutes or until the cheesecakes are set. They will still jiggle a bit. Do not overcook them!
- Allow them to cool in the muffin tin completely before putting it in the fridge to set for a minimum of two hours.
Optional: whip cream topping or some home made tapioca pearls would go nicely with this cheesecake!
I have also even tried this with some coconut graham crackers and they came out amazing!
